Estos n\u00f3dulos son comunidades de bacterias y levaduras que viven en un ecosistema complejo, contenido por su propia sustancia (prote\u00ednas y polisac\u00e1ridos).<\/strong><\/p>\n<p align=\"left\">Los fermentados son alimentos modificados por acci\u00f3n de microorganismos. Estos consumen los az\u00facares y producen \u00e1cido l\u00e1ctico, ac\u00e9tico, etanol, di\u00f3xido de carbono y compuestos que dan sabor y aromas.<\/p>\n<p align=\"left\">En la actualidad debido a la industrializaci\u00f3n, los alimentos son desprovistos de todo tipo de bacterias por lo que pierden las funciones ben\u00e9ficas que aportan. Una de las consecuencias que producen es la afectaci\u00f3n del intestino.<\/p>\n<p align=\"left\">Una forma de revertir esta situaci\u00f3n y beneficiar la salud es consumir k\u00e9fir porque aporta bacterias vivas que en el intestino interact\u00faan con nuestro sistema inmune, aumentando y mejorando las defensas. Adem\u00e1s ayuda a la digesti\u00f3n de los alimentos y se obtienen m\u00e1s nutrientes con funciones anticancer\u00edgenas, entre otras.<\/p>\n<p align=\"left\">Contar con un intestino sano nos protege de muchas enfermedades<\/p>\n<p align=\"left\"><strong>Fermentaciones<\/strong><\/p>\n<p align=\"left\">Se pueden obtener dos tipos de fermentaciones, una a partir de leche y otro de agua y az\u00facar.<\/p>\n<p align=\"left\"><strong>&#8211; Fermentaci\u00f3n con leche<\/strong><\/p>\n<p align=\"left\">Ingredientes: n\u00f3dulos llamados B\u00falgaros.<\/p>\n<p align=\"left\">Se sugiere una proporci\u00f3n de 50 gr. de n\u00f3dulo por \u00bd litro de leche<\/p>\n<p align=\"left\">Para hacer la fermentaci\u00f3n no hace falta incorporar az\u00facar ya que contamos con la lactosa, az\u00facar propia de la leche, que las bacterias la transforman en \u00e1cido l\u00e1ctico.<\/p>\n<p align=\"left\">El tiempo de fermentaci\u00f3n aconsejado es de 24horas obteniendo un producto como si estuviese cortado.<\/p>\n<p align=\"left\">Para saber si la fermentaci\u00f3n es correcta, se pueden utilizar cintas indicadoras de pH (que determinan el grado de acidez). Si no cuenta con estas tiritas hay que observar una leche cortada y aprender a reconocer los aromas de la fermentaci\u00f3n.<\/p>\n<p align=\"left\"><strong>&#8211; Fermentaci\u00f3n de agua<\/strong><\/p>\n<p align=\"left\">Ingredientes: n\u00f3dulos llamados T\u00edbicos.<\/p>\n<p align=\"left\">Para un litro de agua se agregan 3 cucharadas soperas de n\u00f3dulos y 3 (40gr a 50gr) cucharas soperas de az\u00facar y alguna fruta si lo desea. Se sugiere utilizar az\u00facar mascabo que no es refinada.<\/p>\n<p align=\"left\">Colocar en un frasco con tapa.<\/p>\n<p align=\"left\">La fermentaci\u00f3n es m\u00e1s compleja, el tiempo es m\u00e1s largo que el de leche, se produce en aproximadamente 48 horas a temperatura ambiente.<\/p>\n<p align=\"left\">Una vez fermentado se observa la aparici\u00f3n de burbujas que quedan atrapadas en los n\u00f3dulos y estos flotan en su mayor\u00eda.<\/p>\n<p align=\"left\">El sabor dulce desaparece cuando termina la fermentaci\u00f3n, aunque puede no agotarse completamente el az\u00facar. Es importante saber que pueden quedar aproximadamente 20gr. de az\u00facar por litro. Este dato es importante tenerlo en cuenta en personas diab\u00e9ticas o que no puedan consumir az\u00facares simples.<\/p>\n<p align=\"left\">La caracter\u00edstica que presenta es que con los n\u00f3dulos de kefir que quedan, luego de beber el l\u00edquido, se puede hacer un segundo fermentado. Para esto se debe agregar agua y az\u00facar, tambi\u00e9n alguna fruta para otorgarle sabor y dejar fermentar 48 horas nuevamente.<\/p>\n<p align=\"left\">Luego de la fermentaci\u00f3n se debe colocar en la heladera para frenar la fermentaci\u00f3n y as\u00ed impedir que cambie el sabor y no se desarrollen bacterias no deseadas.<\/p>\n<p align=\"left\">Se sugiere hacer preparaciones para 1 o 2 semanas, no m\u00e1s. Puede haber un m\u00ednimo de actividad microbiana por lo que puede cambiar el sabor y aroma, sin que se altere.<\/p>\n<p align=\"left\">Una conservaci\u00f3n por m\u00e1s tiempo, deber\u00eda congelarse en freezer a -20\u00ba.<\/p>\n<p align=\"left\">En el k\u00e9fir de leche se deben colocar los n\u00f3dulos en leche y congelar. En tanto, con el k\u00e9fir de agua hay que colocar los n\u00f3dulos en agua y az\u00facar, tapar y colocar en freezer.<\/p>\n<p align=\"justify\"><strong>Para tener en cuenta<\/strong><\/p>\n<ul>\n<li>Realizar la fermentaci\u00f3n guiada con alguien que sepa o aprender antes de realizarla solo. Utilizar utensilios bien limpios, agua potable, en espacios limpios y desinfectados.<\/li>\n<li>No es un medicamento, no es un laxante, es un alimento.<\/li>\n<li>Tiempo de duraci\u00f3n: el alimento puede durar entre 2 o 3 semanas en heladera, hasta que las propiedades organol\u00e9pticas se pierdan.<\/li>\n<li>Las calor\u00edas que aporta el k\u00e9fir de agua depende del residuo de az\u00facar que queda (m\u00e1s az\u00facar m\u00e1s calor\u00edas) y el de leche se puede comparar a un yogur natural aunque es m\u00e1s nutritivo.<\/li>\n<li>Considerar que puede haber entre 0,5% y 3% de alcohol, evitarlo en ni\u00f1os, embarazadas y en otras situaciones particulares.<\/li>\n<li>S\u00ed se pueden consumir los n\u00f3dulos.<\/li>\n<li>No hay estudios sobre en qu\u00e9 horario o momento es mejor consumirlo. S\u00ed est\u00e1 demostrado que solo 1 vaso (200cc) con frecuencias diarias es suficiente para lograr efecto beneficioso.<\/li>\n<li>En el caso de presentar s\u00edntomas digestivos como distensi\u00f3n o gases despu\u00e9s de consumir k\u00e9fir puede ser por falta de costumbre al consumir fermentados. Se recomienda comenzar con fermentados m\u00e1s simples como el yogur.<\/li>\n<li>En personas que est\u00e9n con s\u00edntomas intestinales previo a consumir a k\u00e9fir como distensi\u00f3n, dolor, gases, diarreas, constipaci\u00f3n se sugiere no consumir k\u00e9fir y resolver primero el momento agudo.<\/li>\n<li>No deben consumir K\u00e9fir aquellas personas en tratamiento con inmunosupresores, enfermedades autoinmunes como Lupus, Quimioterapias o radioterapias.\n<p align=\"right\">Lic.
