{"id":44008,"date":"2021-07-07T16:22:26","date_gmt":"2021-07-07T19:22:26","guid":{"rendered":"https:\/\/osepmendoza.com.ar\/web\/?p=44008"},"modified":"2023-05-19T08:56:39","modified_gmt":"2023-05-19T11:56:39","slug":"conteo-de-carbohidratos","status":"publish","type":"post","link":"https:\/\/osepmendoza.com.ar\/web\/conteo-de-carbohidratos\/","title":{"rendered":"Conteo de carbohidratos"},"content":{"rendered":"<p><strong>Tratamiento nutricional<\/strong><\/p>\n<p>El conteo de carbohidratos ayuda a las personas con diabetes a controlar la ingesta de alimentos y el az\u00facar en la sangre, brindando opciones y flexibilidad en la planificaci\u00f3n de las comidas.<\/p>\n<h4><a name=\"menu2\"><\/a>\u00bfCu\u00e1les alimentos contienen carbohidratos?<\/h4>\n<p>Los granos, frutas, verduras, legumbres y productos l\u00e1cteos como leche, yogur.<\/p>\n<p>El listado<\/p>\n<ul>\n<li>Granos: pan, tortitas, fideos, pastas, galletas saladas, cereales y arroz<\/li>\n<li>Frutas (todas): como manzana, banana, pera, uva, higo, sand\u00eda, mel\u00f3n, naranja.<\/li>\n<li>Productos l\u00e1cteos como leche y yogur<\/li>\n<li>Legumbres: como porotos, lentejas y arvejas<\/li>\n<li>Amasados y dulces: como tortas, galletas dulces, helados, caramelos y otros postres<\/li>\n<li>Jugos, gaseosas, aguas saborizadas<\/li>\n<li>Bebidas de frutas, deportivas y energ\u00e9ticas que contienen az\u00facares<\/li>\n<li>Tub\u00e9rculos \u201cricos en almid\u00f3n\u201d como papa, camote y choclo o ma\u00edz<\/li>\n<\/ul>\n<p>Algunos datos de inter\u00e9s<\/p>\n<p>Entre las verduras que no son ricas en almid\u00f3n encontramos: esp\u00e1rrago, br\u00f3coli, acelga, espinaca, apio, lechuga, zapallito, berenjena, algunos de hojas verdes, pimiento y tomate.<\/p>\n<p>Contrario a las creencias la remolacha, zanahoria y zapallo tienen un contenido medio hidratos de carbono. No hay verduras prohibidas. Solo se debe saber remplazar la porci\u00f3n.<\/p>\n<p>Entre los alimentos que no contienen carbohidratos se incluyen las carnes en general, tanto blancas como rojas, pescado y pollo. Y la mayor\u00eda de los quesos, nueces, aceites y otras grasas.<\/p>\n<p>\u00bfQu\u00e9 sucede cuando comemos alimentos con carbohidratos?<\/p>\n<p>El sistema digestivo descompone los az\u00facares y los almidones y los convierte en glucosa. Estos ingresan en la sangre y elevan los niveles de az\u00facar.<\/p>\n<p>En este punto, la hormona insulina que proviene del p\u00e1ncreas o de las inyecciones de insulina ayuda a las c\u00e9lulas de todo el cuerpo a absorber la glucosa y usarla para obtener energ\u00eda.<\/p>\n<p>Una vez que la glucosa sale de la sangre e ingresa en las c\u00e9lulas sus niveles en sangre vuelven a bajar.<\/p>\n<p>Hay que recordar que la glucosa es una de las formas m\u00e1s simples de az\u00facar.<\/p>\n<h4><a name=\"menu5\"><\/a> \u00bfCu\u00e1ntos carbohidratos por d\u00eda son necesarios?<\/h4>\n<p>La cantidad diaria de carbohidratos, prote\u00ednas y grasas que debe ingerir una persona con diabetes, no es una cifra estanca porque lo correcto para una persona puede no serlo para otra.<\/p>\n<p>Lo que s\u00ed se afirma es que todos necesitamos obtener una suficiente cantidad de carbohidratos para satisfacer las necesidades del cuerpo (energ\u00eda, vitaminas, minerales y fibra).<\/p>\n<p>Los expertos sugieren que la ingesta de carbohidratos deber\u00eda comprender al 45 o 65% de calor\u00edas totales que se consumen en un d\u00eda.<\/p>\n<p>Respecto, a las personas que realizan dietas bajas en calor\u00edas y las que no realizan actividad f\u00edsica deber\u00edan apuntar al extremo inferior de ese rango (45%).<\/p>\n<p>Siguiendo esta l\u00ednea un ejemplo en un plan alimentario ser\u00eda:<\/p>\n<ul>\n<li>Desayuno 30 gr: 1 taza de leche grande + 1 rebanada de pan integral con queso<\/li>\n<li>Almuerzo 45 gr:1\/2 plato de pastas con pollo + ensalada verde+ 1 manzana chica<\/li>\n<li>Merienda 30 gr: 1 yogur descremado + 1 medialuna chica<\/li>\n<li>Colaci\u00f3n de 15 gr: 1 tutuca o 1 barrita de cereal<\/li>\n<li>Cena 45 gr: ensalada verde+ 2 porciones de tarta de verdura + 1 fruta (naranja grande)<\/li>\n<\/ul>\n<p>En este punto debe recordar siempre que la nutricionista es qui\u00e9n lo ayudar\u00e1 a aprender cu\u00e1les alimentos debe consumir, cu\u00e1ntos y cu\u00e1ndo comer en funci\u00f3n de su peso, su nivel de actividad, sus medicinas y los objetivos de glucosa en la sangre.<\/p>\n<p><a name=\"menu6\"><\/a>\u00bfC\u00f3mo saber cu\u00e1ntos carbohidratos contienen los alimentos que consumo?<\/p>\n<p>Para realizar esta acci\u00f3n deber\u00e1 aprender a calcular la cantidad de carbohidratos que hay en los alimentos que come normalmente. Por ejemplo, cada una de las siguientes cantidades de alimentos contiene alrededor de 15 gramos de carbohidratos:<\/p>\n<ul>\n<li>una rebanada de pan tipo lactal<\/li>\n<li>1\/3 taza de pastas<\/li>\n<li>1\/3 taza de arroz<\/li>\n<li>1\/2 taza de fruta fresca o enlatada, de jugo de frutas o una fruta fresca peque\u00f1a como una manzana o naranja peque\u00f1a<\/li>\n<li>1\/2 taza de porotos<\/li>\n<li>1\/2 taza de verduras ricas en almid\u00f3n como pur\u00e9 de papas, choclo, arvejas o habas<\/li>\n<li>3\/4 taza de cereal seco o 1\/2 taza de cereal cocido<\/li>\n<li>1 cucharada de mermelada o jalea<\/li>\n<li>1 porci\u00f3n de pizza a la piedra<\/li>\n<li>1 empanada<\/li>\n<li>1 papa chica tama\u00f1o huevo<\/li>\n<li>3 galletitas de agua o salvado medianas<\/li>\n<li>1 bocha de helado<\/li>\n<li>1\/2 tortita o 1 medialuna chica<\/li>\n<\/ul>\n<p>Respecto a los alimentos con bajo contenido de carbohidratos no es necesario contarlos a menos que se consuman grandes cantidades de ellos.
